New year, new you, right? I think a lot of us are New year, new you, right? I think a lot of us are a little nervous about stepping into a new year…myself included! 

We weren’t prepared for how hard it was last year, but we made it thru and even grew up a little! 

I just want you to know that whatever happens this year, I’ve got you..whether it’s a simple cup of tea on the porch, a hug, feeding your feelings w a box of baklava.

We learned we could get thru hard things together and we will go thru this year together..pinky promise.

I’m proud of the steps you all are taking to keep going!

If you need anything, anything at all, just come talk to me and we will figure it out…together 💕

People are always going to tell you to play it saf People are always going to tell you to play it safe because your dreams are sometimes too big for them to handle.

Take the risk.
Live your dreams.

People will adjust.

So so Sooooo many people told me NOT to open a cafe.

I’m a single mom. There was a world pandemic, and I had no freaking idea how to even do it.

People said: no one is going to buy enough Turkish coffee to pay the rent. The won’t understand the sand machine or how it works.

I did it anyway. I bought the machine. I hosted parties in my house. I had strangers over for tea and coffee in my back patio during the pandemic until I found out space.

You have big dreams. Don’t be made to put them in a small box and tuck them away on a shelf because people don’t believe in it.

Do it anyway. 

I believe in you! If I can do it as a single mom, with no family around, in a pandemic, survived an embezzlement and now a horrible economy, you can do it too!

Make 2026 the year you live your dreams and stop just thinking about them!

Ever wanted to learn how to make our baklava crois Ever wanted to learn how to make our baklava croissants to make for holiday breakfast?

Here ya go! 

1 package 12 croissants from Costco
1 cup baklava syrup

Filling:
4 cups nuts
1 tsp cinnamon 
1 tbsp cornstarch 
1/2 cup sugar
1.5 stick soft butter
2 tbsp milk 
2 eggs + 1 egg white

Fruit

Blend walnuts, sugars, cinnamon, cornstarch,
Add butter, milk, eggs, blend
Put in piping bags
Fill croissants, add fruit if desired
Bake 350 oven 15-ish minutes until filling is set
Brush tops w baklava syrup 
Sprinkle ground nuts to make pretty

Eat it up yum yum yum! 

Slice open croissants
Brush insides w baklava syrup
We made the syrup yesterday, so let’s make the bak We made the syrup yesterday, so let’s make the baklava today!

Insomnia Baklava

Filling:
4 C walnuts
1 C coffee beans
1/2 C sugar
1 tsp cinnamon 

Put in food processor and buzz until light and fluffy

Make baklava:
Defrosted filo dough
Bakkava filling
3 sticks butter, melted
1.5 C Turkish coffee baklava syrup

Lay 4 sheets of filo dough in pan
Sprinkle filling over top enough to cover
Do this 3 times
Add rest of filo dough on top
Use a flat butcher knife to cut rows: 12 across/8 down
Use turkey baster to distribute butter over top
Bake 30-ish minutes until brown 350 oven

Pour syrup on top and trouble left over filling on top
Enjoy!

We had a special order and will have plenty for the case tomorrow!

Turkish Coffee Baklava Syrup

1.5 C water
1/2 C Turkish Coffee

Cook in a pot just lot making a Turkish coffee-when it foams, it’s done!

Strain out grounds

Add to bigger pot w 3 C of sugar and a tbsp of Lemon juice

Bring to a boil

Simmer 13 minutes or until droplets hang on edge of spoon

Let cool and pour over a baklava, in your coffee, on some ice cream…

Can you believe I have been cooking baklava in Salt Lake City for 20 years??!!

Once upon a time, a long time ago…I lost my job working for the Utah Museum of Fine Arts because of budget cuts. I said to myself..”Self: let’s bake some Turkish treats and sell them at the farmers markets!”

I was such a naive little baby entrepreneur who innocently thought: I’ll just do the farmers market for one summer, get picked up by a cafe and sell my treats there! Right? 

Ironically, that actually happened: I only did one summer at the downtown farmers market with my tiny table under the big tree by 4th south. Rebecca, who owned the Tea Grotto at that time, asked me to come and cook the treats for her cafe.

I look back now and marvel at how all the things aligned at that time.

It hasn’t been an easy journey as a single mom w a baklava business over the last 2 decades, but definitely worth it.

Before the pandemic, I had my baklava in about 6-8 cafes, restaurants and markets and was doing pretty well!

When the pandemic happened and I lost 99% of my accounts, it was sink or swim.

The cafe was born out the desire to keep the baklava dream alive and here we are 4+years later still standing..

We have teetered and tottered over the years for sure.

I’m too stubborn to quit or give up on things and now starting to regain our footing.

So! Anyhoo! If you need any baklava for Thanksgiving, Christmas, gifting, you know where to find me!

Walnut rose baklava is one of our staples in our b Walnut rose baklava is one of our staples in our bakery case. We use dried rose petals instead of rose water to infuse the whole baklava w the light rose flavor.

I personally like the flavor that comes thru actual rose petals more than the rose petals water that most others add to the syrup . That has too much of a synthetic flavor to me.

We source our rose petals from @teazaanti ! Their dried rose petals are vibrant in color and flavor!

Baklava crust

Bottom layer: plain cheesecake filling

Middle layer: sliced strawberries and almond chai baklava filling

Top layer: cheesecake filling mixed w 4 berry jam

Then! I melted chocolate and topped each slice w melted chocolate and a sprinkle of almond chai filling!

Nope, never. 

We will never sell frozen and defrosted baklava or other baked goods.

Our motto is if we can’t make it in house homemade, we won’t sell it.
