It was a dark and stormy night…
Days are getting shorter, the weather is changing, and leaves are falling all around us in oranges and reds. Fall is here and it’s time to meet one of our most mysterious flavors is our Black Baklava. The flavors notes hint at something familiar, but you just can’t place where you have had it before. Hint: It’s the syrup.
Our Black Baklava is part of our Boozy Baklava line in which we pair beer syrup with different nuts and sweets layered in between the sheets. We try to use local products as much as possible and that goes for our Beer Syrup as well. Using Unita brewing’s Baba Black beer, we make up a simple syrup replacing the water with a bottle of beer.
This is definitely NOT a syrup you walk away from while it cooks up. Because of all the magical goodies in the beer, I have to use a big stock pot to contain all the bubbles as the carbonation cooks off. This syrup will fool you by making you think it isn’t doing anything and the moment you walk away-it bubbles up and over, creating a bit of a volcano!
Once the syrup is made and set to cool, walnuts and dark chocolate do a danced blend so well with the dark syrup.
