Inspiration hits sometimes like lightning and all of a sudden crazy creativity ensues!
I was at lunch a few weeks ago with my friends from the Banking on Women class and we were talking Easter. One of my friends was planning on making ice cream. In an instant, I suggested adding jelly beans to the last turn of the ice cream which immediately lit up my brain: I COULD ADD JELLYBEANS TO THE BAKLAVA FOR EASTER! It was a colorful explosion in my mental synapses and I had to sit down and absorb it all…it can be quite overpowering to be hit with such an explosion, you know!
Originally, I wanted to make the jellybean baklava for my girls as a sweet fun treat for Easter and then I thought a bit more..My mommy voice came in super clear: They cannot possibly eat the whole tray-there is so much sugar in it!!
Ok Mommy brain: think! Then, it hit me! A Easter egg hunt! Fill plastic Easter eggs with baklava and hide them at Sugarhouse coffee on Easter weekend. Emily, the owner, was excited and then I was able to get down to business.
First, let me tell you that jellybeans in a food processor is the loudest thing you have ever heard! Next, jellybeans do NOT melt in the baklava when cooked.
I had a lot of fun prepping and planning this impromptu Easter Egg hunt for adults. Adults need to have fun on Easter too! I cut the pieces even smaller and was able to fill over 90 small eggs and a few bigger Easter containers. Once they were all filled, I brought them down to Sugarhouse Coffee for them to hide Saturday and Sunday mornings. It was a fun time and the baklava was actually pretty tasty!
Our first Annual Baklava Easter Egg Hunt was a sweet success–can’t wait to do it again next year!
